Plus Running, Minus Running.
This evening I went for a long run (well, long for me). Kara would consider it a warmup, but 5 miles is pretty good for me. I didn't even stop to walk, so that's new!
But then I pretty much cancelled out any health benefit the running may have gained me with my dinner.
I started with some yummy soft potato rolls, slider-sized. Browned to a gorgeous golden brown, in butter of course.
Then I stuffed those yummy yellow buns with some ground beef (seasoned simply with salt and pepper, not the 80's hip-hop duo), some applewood smoked bacon, and a fried egg.
I stay healthy by not eating dessert after meals like this.

Taco night!
Originally I was going to make some baked ziti type thing, but that'll have to wait for another night. Instead, we made Tacos!
The baked ziti will have to wait for another day. Maybe this weekend. But here's how I did the tacos. They're pretty simple.

Best breakfast
I asked myself, "Self, what could make some homemade banana pancakes even better?"
I answered myself, "Self, I do believe that bacon would make those better, as bacon makes everything better."
I've seen bacon pancakes in the past, where they put a whole (or half) strip of bacon in a pancake, but that seems like it would make it tough to cut. We like our pancakes nice and soft, and able to cut with a fork.
This is the correct way to make bacon pancakes:

Take some bacon, cut it into small pieces, then cook it up so it has some crispy bits, and some chewy bits. Set it aside. Oh, and save the drippings, because that's some good stuff.
The batter is pretty basic, with the addition of a smooshed up banana. Serve with some warm maple syrup, and a runny egg!
